Fab Recipe: Bacon Wrapped Tater Tots

Let’s be real…the best part of game day is the food. When it comes to recipes for game day grub, the easier the better. After all, nobody wants to miss all the fun and excitement of the game.

I am so excited to share with you one of my favorite appetizer recipes of all time. It involves two utterly delicious components: tater tots and bacon. It begins with wrapping tater tots in bacon strips and securing it with a toothpick. I like to amp up the flavor by rolling it in light brown sugar. It is baked in a high temperature oven for 30 to 40 minutes until the bacon is crispy. The caramelized brown sugar on the outside gives it an extra sheen and sweetness. I love dipping these beauties in my homemade creamy chipotle ranch dipping sauce. The smoky and sweet bacon wrapped tater tots against the spicy dipping sauce are simply hard to resist.

One piece of advice: you might want to double or even triple the recipe. Trust me, you’ll thank me later. I guarantee you that this bacon wrapped tater tots will be a winner at your Super Bowl party or any celebration for that matter.

Ingredients
For the Bacon Wrapped Tater Tots:
  • 30 pieces frozen tater tots
  • 1 pkg. (16 oz.) Oscar Meyer thick cut bacon
  • ¼ cup light brown sugar
For the Chipotle Ranch Dipping Sauce:
  • ½ cup mayonnaise
  • ½ cup sour cream
  • ¼ cup buttermilk
  • 1-2 pieces chipotle in adobo
  • 1-2 teaspoon chipotle in adodo sauce
  • 1 packet (.4 oz.) Hidden Valley Buttermilk Recipe (salad dressing and seasoning mix)
Instructions
For the Bacon Wrapped Tater Tots:
  1. Preheat oven to 400 degrees F.
  2. LIne a sheet tray with aluminum foil to completely cover the bottom and place a wire rack on top. FAB TIP: Lining the sheet tray with aluminum foil allows for easy clean up!
  3. Cut all the bacon strips in half.
  4. Tightly wrap each tater tot in a piece of bacon.
  5. Dredge each tater tot in light brown sugar, pressing to coat.
  6. Secure with a toothpick.
  7. Lay it on top of the wire rack with a sheet tray underneath.
  8. Make sure to leave 1-inch space in between to ensure even browning.
  9. Repeat the process until all the tater tots are wrapped in bacon.
  10. Bake in the preheated oven for 20 minutes.
  11. Flip each tater tot on the other side and bake for another 20 to 25 minutes or until the bacon is crispy all over.
  12. Set aside to cool.
  13. You may garnish with finely chopped fresh parsley on top if you desire.
For the Chipotle Ranch Dipping Sauce:
  1. In a blender or food processor, place the 1 or 2 chipotle in adobo (depending on the spice level you want) and pulse until smooth.
  2. Add the chipotle in adobo sauce, mayo, and sour cream.
  3. Mix until smooth.
  4. Add the buttermilk and ranch powder.
  5. Blend until well incorporated.
  6. Keep chilled until ready to serve.
