Cut apples in half and remove the core. Use a mandoline or sharp knife to slice apples into thin, evenly pieces. FAB TIP: Don’t cut the apples too thick or it will break when you roll.
Combine water and lemon. Soak sliced apples. This will help prevent oxidation and browning. FAB TIP: Ambrosia Apples takes longer to oxidize, so it’s great for kid’s lunches or fruit salads and platters.
Microwave soaked apples for 3 minutes or simmer to soften. Drain water. Set aside.
Preheat oven to 375 degrees. Grease muffin pan and aside.
Lightly dust your work surface with flour. Unwrap the puff pastry and cut into 6 equal parts.
Brush the top with butter.
Combine sugar and cinnamon. Sprinkle the mixture on top.
Place the apples on the half top of the puff pastry dough so that they overlap each other.
Fold the bottom part of the dough to cover the bottom half of the sliced apples.
Brush butter on the bottom part of dough. Sprinkle sugar and cinnamon mixture.

Gently place into greased muffin pan.
Bake for 40 minutes or until cooked.
Drizzle with caramel sauce and garnish with peanuts.
